Cutting back on animal protein? Avoiding meat because it?s becoming so expensive? Say ?hello? to Tempeh! There is controversy surrounding the safety of soy products these days and folks are avoiding them.? However, I?m here to day, fermented soy bean products are okay.

Gr8 Health wants you to eat your broccoli, but to also try some protein-rich tempeh! Tempeh is a complete protein. It?s easily found at most grocery stores and health food shops. Just ask the manager.

? Tempeh has probiotics, B Vitamins, protein, and FIBER
? Broccoli has: vitamin A and K, C, minerals and FIBER.
? Cauliflower has C, K, Folate, FIBER, and protein
? Red pepper has enormous amounts of vitamins C and A.
? Sunflower seeds Lowers cholesterol / full of magnesium & selenium

Recipe:

2 cups washed Greens of choice-A blend of wild greens is best
1 cup each chopped broccoli and cauliflower florets, snap peas, diced red pepper-Anti-Cancer
1 grated carrot-Good for eye sight
1 red bell pepper
Sunflower seeds
? cup raisins
Green onion, chopped-Anti-Cancer
Tempeh saut?ed in olive oil, honey and ginger

? Cut tempeh into ? inch cubes
? In a skillet, warm them in olive oil, honey and fresh ginger. Not too long.
? Be sure to wash all your vegetables before they are chopped
? Toss everything into a large salad bowl and toss with the following dressing.

Dressing
2-3 tbs. organic peanut butter-Protein and Omega 6
1 tsp. minced, peeled, ginger (Use a food grater)-Anti-inflammatory
1 ? lemon juices-Vitamin C
Water as needed for consistency
Pur?e in blender
Sea salt and pepper to taste
